This simple puree blends ripe mangoes with a touch of lime juice and sugar to balance sweetness and acidity. Use it to top yogurt, swirl into smoothies, layer in desserts, or spoon over pancakes. A quick strain gives it a silky, restaurant-smooth texture.

Ingredients

  • 3 ripe mangoes, peeled and pitted
  • 1 tablespoon lime juice
  • 1 tablespoon granulated sugar, or to taste
  • 2 tablespoons water, as needed
  • 1/8 teaspoon salt

Method

  1. Cut the mango flesh into rough chunks and add to a blender or food processor.

  2. Add the lime juice, sugar, and salt to the blender.

  3. Blend on high until completely smooth, scraping down the sides as needed and adding water a tablespoon at a time to reach a pourable consistency.

  4. Taste and adjust sugar or lime juice as needed, then blend briefly to combine.

  5. For an ultra-smooth texture, pour the puree through a fine-mesh strainer, pressing with a spatula to remove any fibrous bits.

  6. Transfer the puree to an airtight container or jar and refrigerate until ready to use.
