Red meat
Oven-baking keeps the strips flat and evenly crisped while a brown sugar and maple glaze caramelizes into a sticky, candy-like coating. It works well for weekend brunch spreads or as a sweet-savory topping for sandwiches and salads.
Ingredients
- 12 thick-cut bacon strips
- 1/3 cup maple syrup
- 2 tablespoons light brown sugar, packed
- 1/2 teaspoon black pepper, freshly ground
- 1/4 teaspoon cayenne pepper
Method
-
Preheat the oven to 400°F and line a 9x13-inch rimmed baking sheet with foil, then set a wire rack on top.
-
Arrange the bacon strips in a single layer on the wire rack, close together but not overlapping.
-
In a small bowl, whisk together the maple syrup, brown sugar, black pepper, and cayenne pepper.
-
Bake the bacon for 15 minutes, until it begins to render fat and lightly crisp at the edges.
-
Remove the pan from the oven and brush the maple glaze generously over the top of each strip.
-
Return the pan to the oven and bake 10 minutes, until the glaze is bubbling and the bacon is deeply browned and crisp at the edges.
-
Let the bacon cool on the rack for 5 minutes; the glaze will set and firm up slightly as it cools.
-
Transfer the bacon to a serving platter, scraping up any extra glaze from the foil to drizzle over the top.
