This glaze balances the caramel warmth of maple syrup with the sharp bite of Dijon mustard, simmered briefly to thicken into a glossy, spoonable finish. It works equally well brushed over roasted salmon, glazed on pork chops, or drizzled over roasted carrots. A splash of vinegar keeps the sweetness in check while a touch of butter rounds out the texture.
Ingredients
- 3/4 cup pure maple syrup
- 1/4 cup Dijon mustard
- 2 tablespoons whole grain mustard
- 2 tablespoons apple cider vinegar
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper, freshly ground
- 1/4 teaspoon smoked paprika
Method
-
In a small saucepan, combine the maple syrup, Dijon mustard, whole grain mustard, apple cider vinegar, minced garlic, salt, pepper, and smoked paprika. Whisk until smooth.
-
Set the saucepan over medium heat and bring the mixture to a gentle simmer, whisking occasionally.
-
Reduce heat to low and simmer until the glaze thickens slightly and coats the back of a spoon.
-
Remove from heat and whisk in the butter until fully melted and the glaze is glossy.
-
Let the glaze cool for 5 minutes before brushing onto meats or vegetables, or transfer to a jar and refrigerate for later use.
