Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 1 1/2 cups walnuts, chopped
- 1/2 cup unsalted butter
- 3/4 cup pure maple syrup
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine sea salt
- 1/2 cup crisp rice cereal

Toast the walnuts in a dry 9-inch skillet over medium heat, stirring frequently, until fragrant, about 5 minutes. Set aside to cool.

In a medium saucepan over medium heat, combine the butter, maple syrup, and brown sugar. Cook, stirring constantly, until the butter melts and the mixture is smooth, about 3 minutes.

Remove from heat and stir in the peanut butter, vanilla extract, and salt until smooth.

Add the oats, toasted walnuts, and crisp rice cereal to the saucepan and stir until fully coated and combined.
