This chilled matcha drink layers whisked green tea with a bright mint infusion for a balanced, slightly grassy sweetness. Shaken over ice until frothy, it works well as an afternoon pick-me-up or a light dessert alternative. The mint syrup is easy to make ahead and keeps the matcha flavor from feeling one-note.

Ingredients

  • 2 teaspoons matcha powder
  • 2 ounces hot water (175°F)
  • 1/4 cup fresh mint leaves
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 4 ounces cold milk
  • 1 cup ice cubes
  • 1 fresh mint sprig, for garnish

Method

  1. Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves.

  2. Remove from heat, add the mint leaves, and let steep until fragrant and cooled to room temperature.

  3. Strain the mint syrup through a fine-mesh sieve into a small jar, pressing the leaves to extract liquid; discard the leaves.

  4. Sift the matcha powder into a bowl to remove clumps, then add the hot water.

  5. Whisk the matcha briskly in a zigzag motion until frothy and no dry clumps remain.

  6. Fill a glass with ice cubes, then pour in 1 tablespoon of the mint syrup.

  7. Pour the cold milk over the ice, then slowly add the whisked matcha on top.

  8. Stir gently to combine the layers, garnish with a fresh mint sprig, and serve immediately.
