This buttercream blends softened butter with powdered sugar and a touch of peppermint extract for a smooth, pipeable frosting. It covers two 9-inch cake layers or tops two dozen cupcakes, making it a versatile finish for chocolate or vanilla desserts. Adjust the mint intensity and tint to suit the occasion.
Ingredients
- 1 1/2 cups unsalted butter, softened
- 6 cups powdered sugar, sifted
- 3 tablespoons heavy cream
- 1 1/2 teaspoons peppermint extract
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2 drops green food coloring (optional)
Method
-
In a large bowl, beat the softened butter with an electric mixer on medium speed until smooth and creamy, about 2 minutes.
-
Reduce the mixer speed to low and gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.
-
Add the heavy cream, peppermint extract, vanilla extract, and salt. Beat on medium-high speed until light and fluffy, about 3 minutes.
-
If a stronger mint flavor is desired, add an additional 1/2 teaspoon peppermint extract and mix to combine; add green food coloring one drop at a time until the desired shade is reached.
-
If the buttercream is too thick, add more heavy cream, 1 teaspoon at a time, beating until the desired piping consistency is reached.
-
Use immediately to frost or pipe onto cooled cakes or cupcakes, or cover tightly and store at room temperature until ready to use.
