Ingredients
- 2 cups fresh cilantro leaves, loosely packed
- 1 cup fresh mint leaves, loosely packed
- 2 green chiles, roughly chopped
- 1 clove garlic
- 1/2 inch fresh ginger, peeled
- 1/4 cup plain yogurt
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon sugar
- 1/2 teaspoon salt, or to taste
- 2 tablespoons water, or as needed

Rinse the cilantro and mint leaves thoroughly and shake off excess water.

Add the cilantro, mint, green chiles, garlic, ginger, yogurt, lemon juice, cumin, sugar, and salt to a blender.

Blend on high, adding water a tablespoon at a time, until the mixture is smooth and pourable, scraping down the sides as needed.

Taste and adjust salt, lemon juice, or sugar as needed.

Transfer to a jar or airtight container and refrigerate until ready to serve.
