This glaze captures the classic julep flavors of bourbon, mint, and sugar in a pourable form perfect for drizzling over pound cake, grilled fruit, or holiday ham. Simmering the mint in simple syrup before whisking in bourbon and butter gives the glaze a rounded, fragrant sweetness without any harsh alcohol bite. It comes together quickly on the stovetop and keeps well for topping desserts throughout the week.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 cup fresh mint leaves, loosely packed
  • 1/4 cup bourbon
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon salt
  • 1 cup powdered sugar

Method

  1. In a 6-quart saucepan, combine the granulated sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves.

  2. Remove from heat, add the mint leaves, and crush them lightly with a spoon. Cover and let steep.

  3. Strain the syrup through a fine-mesh sieve into a bowl, pressing on the mint leaves to extract the liquid; discard the mint.

  4. Return the strained syrup to the saucepan over low heat. Whisk in the bourbon, butter, lemon juice, and salt until the butter melts and the mixture is smooth.

  5. Remove from heat and whisk in the powdered sugar until fully dissolved and the glaze is smooth and glossy.

  6. Let the glaze cool for 10 minutes to thicken slightly before drizzling over cake, fruit, or ham.
