Ingredients
- 1/2 cup white miso paste
- 1/4 cup mirin
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons water
Method

In a medium bowl, whisk together the miso paste, mirin, soy sauce, and brown sugar until the sugar dissolves and the mixture is smooth.

Whisk in the rice vinegar, sesame oil, garlic, ginger, and water until fully combined and the marinade is uniform in color.

Use immediately to marinate proteins or vegetables, or transfer to a jar and refrigerate for up to 1 week.

If marinating, coat your protein or vegetables evenly in the marinade and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor.

Remove the protein from the marinade, letting excess drip off, and cook using your preferred method (grilling, broiling, or pan-searing), basting with reserved marinade during the last few minutes for extra glaze.
