Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1/2 cup parsley, chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup dill, chopped
  • 1/4 cup mint, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until translucent.
  3. Add the chopped parsley, cilantro, dill, and mint to the saucepan. Stir and cook for an additional 2-3 minutes until the herbs are fragrant.
  4. Add the rinsed rice to the saucepan, stirring to combine it with the sautéed herbs and onion mixture.
  5. Pour in the water and add salt to taste. Bring the mixture to a boil over medium-high heat.
  6. Once boiling, reduce the heat to low. Cover the saucepan and simmer the rice for 15-20 minutes, or until tender and the water is absorbed.
  7. Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the rice to steam. Fluff the rice with a fork before serving.
