This mocktail version of the classic mojito muddles fresh mint leaves with lime juice and sugar, then tops the mixture with soda water for a bubbly, herbaceous drink. It's a bright, low-sugar option for warm afternoons, mocktail hours, or anyone skipping the rum without skipping the flavor.

Ingredients

  • 10 fresh mint leaves, plus a sprig for garnish
  • 1/2 lime, cut into wedges
  • 2 tablespoons granulated sugar
  • 1 cup ice cubes
  • 1/2 cup soda water

Method

  1. Place the mint leaves and lime wedges in the bottom of a sturdy glass.

  2. Add the sugar and muddle firmly with a muddler or wooden spoon for about 30 seconds, pressing to release the mint oils and lime juice.

  3. Fill the glass with ice cubes.

  4. Top with soda water and stir gently to combine.

  5. Garnish with a fresh mint sprig and serve immediately with a straw.
