This vintage-style fizz blends scotch whisky with lemon and orange juice, a touch of sugar, and egg white for a silky, cloud-like foam. Shaken hard and topped with chilled soda water, it finishes crisp and effervescent, making it a refreshing choice for brunch or an evening aperitif.

Ingredients

  • 2 ounces blended scotch whisky
  • 1/2 ounce fresh lemon juice
  • 1/2 ounce fresh orange juice
  • 1/2 ounce simple syrup
  • 1 egg white
  • 3 ounces chilled soda water
  • 4 ice cubes
  • 1 orange slice, for garnish

Method

  1. Add the scotch, lemon juice, orange juice, simple syrup, and egg white to a cocktail shaker without ice.

  2. Dry shake (no ice) vigorously for 20 seconds to emulsify the egg white and build a thick foam.

  3. Add the ice cubes to the shaker and shake again vigorously for 15 seconds until well chilled.

  4. Strain into a chilled highball glass over fresh ice.

  5. Top with chilled soda water, letting the foam rise to the surface.

  6. Garnish with an orange slice and serve immediately.
