Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth

  • 1 Tbsp olive oil
  • 1 medium red onion, sliced
  • 1 medium red bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 15 oz can chickpeas, drained and rinsed
  • 1/4 cup parsley, chopped
  • 1/4 cup mint, chopped
  • 1/4 cup almonds, chopped
  • 1/4 cup tahini
  • 1 Tbsp lemon juice

Instructions

  1. Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil, reduce heat, and simmer for 15-20 minutes until quinoa is cooked.
  2. Mix cumin, paprika, turmeric, cinnamon, and cayenne pepper in a small bowl.
  3. Heat olive oil in a large skillet over medium heat. Add red onion and red bell pepper, and sauté for 5 minutes until softened.
  4. Add cherry tomatoes, chickpeas, and spice mix to the skillet. Cook for 5 minutes until the tomatoes are slightly softened.
  5. Whisk together tahini and lemon juice in a small bowl to make the dressing.
  6. Divide cooked quinoa among bowls. Top with the vegetable mixture, parsley, mint, and almonds, then drizzle with the tahini dressing.
