- 1 cup quinoa, rinsed
- 2 cups vegetable broth

- 1 15 oz can chickpeas, drained and rinsed

- 1/4 cup mint, chopped
- 1/4 cup almonds, chopped
- 1/4 cup tahini
- 1 Tbsp lemon juice
Instructions
- Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil, reduce heat, and simmer for 15-20 minutes until quinoa is cooked.
- Mix cumin, paprika, turmeric, cinnamon, and cayenne pepper in a small bowl.
- Heat olive oil in a large skillet over medium heat. Add red onion and red bell pepper, and sauté for 5 minutes until softened.
- Add cherry tomatoes, chickpeas, and spice mix to the skillet. Cook for 5 minutes until the tomatoes are slightly softened.
- Whisk together tahini and lemon juice in a small bowl to make the dressing.
