These bites blend dates, pecans, and warm spices into a sticky dough that tastes like pecan pie filling without any baking. They come together in a food processor and firm up in the fridge, making them a quick make-ahead snack or holiday treat. Roll them in chopped pecans for extra crunch and a rustic finish.
Ingredients
- 1 1/2 cups pitted dates, packed
- 1 1/2 cups pecans, toasted
- 1/4 cup maple syrup
- 1 tablespoon unsalted butter, softened
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup pecans, finely chopped, for coating
Method
-
Soak the dates in warm water for 10 minutes if they feel dry or firm, then drain well.
-
Place the toasted pecans in a food processor and pulse 5 to 6 times until coarsely chopped.
-
Add the dates, maple syrup, butter, cinnamon, nutmeg, vanilla, and salt to the processor.
-
Process on high for 1 to 2 minutes, stopping to scrape down the sides, until the mixture forms a sticky, uniform dough that holds together when pressed.
-
Scoop out level tablespoons of the mixture and roll between your palms into 1-inch balls.
-
Spread the finely chopped pecans on a plate and roll each ball in the pecans to coat evenly.
-
Arrange the bites on a parchment-lined tray and chill until firm.
-
Transfer to an airtight container and store in the refrigerator until ready to serve.
