- 8 oz rice noodles
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 block firm tofu, cubed
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp cornstarch
- 1/4 cup water
- 2 tbsp vegetable oil
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a small bowl, mix soy sauce and sesame oil. Set aside.
- In a separate bowl, combine cornstarch and water to make a slurry. Set aside.
- In a large pan, heat vegetable oil over medium-high heat. Add tofu cubes and cook until golden brown, about 5 to 7 minutes. Remove from pan and set aside.
- In the same pan, add more oil if needed. Stir-fry garlic and ginger for 1 to 2 minutes until fragrant.
- Add bell peppers and broccoli to the pan. Cook for 3 to 4 minutes until slightly tender.
- Add the cooked noodles and tofu back to the pan. Pour the soy sauce mixture and cornstarch slurry over the ingredients.
- Stir well to combine and cook for another 2 to 3 minutes until the sauce thickens.
- Allow the stir-fry to cool before transferring to freezer-safe containers for storage.
- To reheat, microwave or stir-fry from frozen until heated through.
