Ingredients

  • 20 Oreo cookies, divided
  • 1 cup unsalted butter, melted

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Method

  1. Preheat oven to 350°F and line a 9x13-inch baking pan with parchment paper, leaving overhang on the sides.

  2. Arrange 16 whole Oreo cookies in a single layer across the bottom of the prepared pan; roughly chop the remaining 4 cookies and set aside.

  3. In a large bowl, whisk together the melted butter and sugar until combined.

  4. Whisk in the eggs one at a time, then stir in the vanilla extract until the batter is smooth and glossy.

  5. Sift the cocoa powder, flour, salt, and baking powder over the wet ingredients and fold with a spatula just until no dry streaks remain.

  6. Pour the brownie batter evenly over the whole Oreos in the pan, spreading to the edges with a spatula.

  7. Scatter the chopped Oreo pieces over the top of the batter.

  8. Bake until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs, 35 to 40 minutes.
