Orgeat is a sweet almond syrup brightened with orange blossom water and a touch of spirit for preservation. Made by steeping ground almonds in simple syrup, it brings a nutty, floral richness to mai tais and other classic tropical drinks. A splash of vodka or brandy at the end extends its shelf life without altering the flavor.

Ingredients

  • 2 cups raw almonds, finely ground
  • 2 cups granulated sugar
  • 1 cup water
  • 1 tablespoon orange blossom water
  • 2 tablespoons vodka or brandy

Method

  1. In a food processor, pulse the raw almonds until finely ground, resembling coarse meal.

  2. In a 6-quart saucepan, combine the ground almonds with the water and bring to a gentle simmer over medium heat.

  3. Remove from heat, cover, and let the almond mixture steep at room temperature for 8 hours to extract flavor.

  4. Strain the mixture through a fine-mesh strainer lined with cheesecloth into a bowl, pressing and squeezing the solids to extract as much almond liquid as possible. Discard the spent almond meal.

  5. Return the strained almond liquid to the saucepan and add the sugar. Warm over medium-low heat, stirring constantly, until the sugar fully dissolves, about 5 minutes.

  6. Remove from heat and let the syrup cool to room temperature.

  7. Stir in the orange blossom water and vodka or brandy until fully incorporated.

  8. Pour the orgeat into a clean 16-ounce bottle or jar, seal, and refrigerate for up to one month.
