This cocktail layers muddled fresh basil with pulpy passionfruit and a squeeze of lime for a tart, aromatic sipper. A quick basil-infused simple syrup deepens the herbal note without turning the drink grassy. Serve it over crushed ice as a warm-weather patio drink or a refreshing finish to a dinner party.
Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 cup fresh basil leaves, loosely packed
- 6 fresh basil leaves, for muddling
- 2 ripe passionfruit, pulp scooped out
- 2 ounces gin
- 3/4 ounces fresh lime juice
- 3/4 ounces basil-infused simple syrup
- 1 cup crushed ice
- 1 basil sprig, for garnish
- 1 passionfruit half, for garnish
Method
-
Combine the water and sugar in a small saucepan over medium heat, stirring until the sugar dissolves.
-
Remove the syrup from the heat, add the 1/2 cup of basil leaves, and let steep until cooled to room temperature.
-
Strain the cooled syrup through a fine-mesh sieve into a jar, pressing on the basil leaves to extract flavor, and discard the leaves.
-
Place the 6 fresh basil leaves in the bottom of a sturdy rocks glass or cocktail shaker and muddle gently to release their oils without tearing them to shreds.
-
Add the passionfruit pulp to the muddled basil and muddle briefly to combine.
-
Add the gin, lime juice, and 3/4 ounce basil-infused simple syrup to the glass or shaker.
-
Fill with crushed ice and swizzle or shake briefly to chill and combine, keeping the passionfruit seeds suspended in the drink.
-
Top with a bit more crushed ice if needed, then garnish with a basil sprig and a passionfruit half.
