This smooth peach puree uses just a handful of ingredients to capture the fruit's natural sweetness and bright color. Ingredients
- 2 pounds ripe peaches, peeled, pitted, and sliced
- 2 tablespoons granulated sugar
- 1 tablespoons lemon juice
- 2 tablespoons water

Peel, pit, and slice the peaches.

Combine the sliced peaches, sugar, lemon juice, and water in a 6-quart saucepan over medium heat.

Bring to a gentle simmer, then reduce heat to low and cook, stirring occasionally, until the peaches are very soft and breaking down.

Remove from heat and let cool slightly, about 5 minutes.

Transfer the mixture to a blender or food processor and puree until completely smooth, about 1 minute.

Press the puree through a fine-mesh sieve to remove any remaining skin or fibrous bits, if a smoother texture is desired.

Transfer the puree to a jar or airtight container and refrigerate until chilled, at least 1 hour, before serving.
