Ingredients

  • 1/2 cup rice, rinsed
  • 4 cups water
  • 1 cup milk
  • 1 cup smooth peanut butter
  • 1/4 cup sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup roasted peanuts, chopped, for garnish

Method

  1. In a 6-quart saucepan, combine the rinsed rice and water. Bring to a boil over high heat.

  2. Reduce heat to low, cover, and simmer until the rice is very soft and starting to break down, stirring occasionally.

  3. Stir in the milk, peanut butter, sugar, ground ginger, salt, and cinnamon until the peanut butter is fully dissolved and smooth.

  4. Continue simmering over low heat, stirring frequently, until the porridge thickens to a creamy consistency.

  5. Taste and adjust sweetness or salt as needed. If the porridge is too thick, stir in additional milk or water to reach desired consistency.

  6. Ladle into bowls and top with chopped roasted peanuts before serving warm.
