Ingredients
- 1 napa cabbage, cored and cut into 1-inch pieces (about 2 pounds)
- 2 tablespoons kosher salt
- 1 cup rice vinegar
- 1/2 cup water
- 1/3 cup granulated sugar
- 3 cloves garlic, thinly sliced
- 1 tablespoon fresh ginger, thinly sliced
- 1 small red chile, thinly sliced (or 1/2 teaspoon red pepper flakes)
- 1 teaspoon whole black peppercorns
- 1 bay leaf

Place the cabbage pieces in a large colander or bowl and toss with the kosher salt. Let sit for 20 minutes to draw out excess moisture.

Rinse the cabbage thoroughly under cold water to remove excess salt, then drain well and pat dry with a clean towel.

In a small saucepan, combine the rice vinegar, water, sugar, garlic, ginger, chile, peppercorns, and bay leaf. Bring to a simmer over medium heat, stirring until the sugar dissolves.

Remove the brine from the heat and let cool for 5 minutes.

Pack the drained cabbage into a large glass jar or airtight container. Pour the warm brine, including the garlic, ginger, and chile, over the cabbage, pressing down so the cabbage is fully submerged.

Let the jar cool to room temperature with the lid loosely set on top, then seal tightly and refrigerate.
