- 2 cups pineapple juice
- 1/2 cup light brown sugar, packed
- 1/4 cup dark rum
- 2 tablespoons unsalted butter
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon fresh lime juice
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt

Bring the mixture to a simmer, stirring occasionally to dissolve the sugar, and cook for 8 minutes to reduce slightly.

In a small bowl, whisk the cornstarch and water together until smooth to form a slurry.

Whisk the cornstarch slurry into the simmering glaze and continue cooking until it thickens enough to coat the back of a spoon, about 3 minutes.
