This basic yeasted dough comes together with just flour, water, yeast, salt, and olive oil, then rests to develop gluten and flavor. Ingredients
- 3 1/2 cups all-purpose flour, plus more for dusting
- 1 packet active dry yeast (about 2 1/4 teaspoons)
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 1 1/3 cups warm water (about 110°F)
- 2 tablespoons olive oil, plus more for the bowl

In a small bowl, stir the warm water, sugar, and yeast together. Let stand until foamy, about 5 to 10 minutes.

In a large bowl, whisk together the flour and salt.

Pour the yeast mixture and olive oil into the flour. Stir with a wooden spoon or spatula until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes, adding flour a tablespoon at a time if the dough is too sticky.

Shape the dough into a ball and place it in a large, lightly oiled bowl, turning to coat. Cover tightly with plastic wrap.

Let the dough rise in a warm spot until doubled in size, about 1 to 2 hours.
