Ingredients

  • 2 lb pork shoulder, cubed

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the cubed pork shoulder and cook until browned on all sides, about 5 to 7 minutes.

  5. Pour in the can of diced tomatoes and 2 cups of chicken broth.
  6. Bring the mixture to a boil, then reduce the heat to low. Season with salt and pepper to taste.
  7. Cover the pot and let the stew simmer for 1.5 to 2 hours, stirring occasionally, until the pork is tender.
  8. Once done, serve the stew hot, optionally garnished with fresh herbs such as parsley or cilantro.
