This layered gin cocktail uses butterfly pea flower tea to create a deep indigo base that blushes violet-pink when fresh lime juice is added, mimicking a bubbling potion. A small, food-safe dry ice pour at serving time sends smoky tendrils curling over the glass for dramatic effect. It works well for Halloween parties, fantasy-themed gatherings, or any occasion that calls for a little tableside theater.
Ingredients
- 1 tablespoon dried butterfly pea flowers
- 1/2 cup boiling water
- 2 ounces gin
- 3/4 ounce fresh lime juice
- 1/2 ounce simple syrup
- 1 cup ice cubes
- 1 lime wheel, for garnish
- 2 pieces food-grade dry ice pellets
- 1/4 cup warm water, for activating dry ice
Method
-
Steep the dried butterfly pea flowers in the boiling water for 5 minutes, then strain the liquid into a heatproof cup and discard the flowers.
-
Let the butterfly pea tea cool to room temperature, about 10 minutes.
-
Fill a cocktail shaker with the ice cubes, then add the gin, 1 ounce of the cooled butterfly pea tea, simple syrup, and lime juice.
-
Shake vigorously for 15 seconds until the shaker feels frosty on the outside.
-
Strain the cocktail into a sturdy, heatproof serving glass; the drink should appear deep blue-indigo.
-
Garnish the rim with the lime wheel; squeezing extra lime juice over the surface just before serving will shift the color toward violet-pink.
-
Just before presenting the drink, use tongs to drop the food-grade dry ice pellets into a small heatproof dish set beside or beneath the glass, then pour the warm water over the pellets to release thick fog.
-
Serve immediately while the fog billows, keeping the dry ice dish out of direct contact with the drink and ensuring the area is well ventilated.
