Ingredients
- 1 9-inch unbaked pie crust, fitted into a pie dish
- 15 ounces pumpkin puree
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 1/2 cups evaporated milk
- 1 cup heavy cream, chilled
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Method
-
Preheat the oven to 425°F. Fit the unbaked pie crust into a 9-inch pie dish, crimping the edges decoratively.
-
In a large bowl, whisk the pumpkin puree, granulated sugar, salt, cinnamon, ginger, and cloves until well combined.
-
Whisk in the eggs one at a time, then gradually whisk in the evaporated milk until the filling is smooth.
-
Pour the filling into the prepared crust, filling to just below the rim.
-
Bake at 425°F for 15 minutes.
-
Reduce the oven temperature to 350°F and continue baking 40 to 50 minutes, until the center is just set and a slight wobble remains.
-
Remove the pie from the oven and cool on a wire rack to room temperature, about 2 hours.
-
Refrigerate the pie until fully chilled and set, at least 3 hours or overnight.
-
Just before serving, beat the heavy cream, powdered sugar, and vanilla extract with a mixer on medium-high speed until soft peaks form, about 3 minutes.
-
Slice the chilled pie and top each slice with a dollop of whipped cream.
