Ingredients
- 2 cups pitted dates
- 1 cup walnuts
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/3 cup unsweetened shredded coconut, for rolling
Method
-
Place the walnuts in a food processor and pulse 5 to 6 times until coarsely chopped.
-
Add the pitted dates, salt, vanilla extract, and cinnamon to the processor.
-
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until it forms a sticky, cohesive dough.
-

-
Spread the shredded coconut on a small plate and roll each ball in the coconut to coat evenly.
