- 1 cup white rice, rinsed
- 4 cups whole milk

- 2 egg yolks, beaten
- 1/2 cup raisins

In a 6-quart saucepan, combine the rinsed rice, 3 cups of the milk, sugar, and salt over medium heat.

Bring to a gentle simmer, stirring occasionally, then reduce heat to low and cook uncovered, stirring every few minutes to prevent sticking.

Stir in the remaining 1 cup of milk and the cinnamon, then continue to simmer, stirring frequently, until the rice is tender and the mixture has thickened to a creamy consistency.
