Halved bananas are roasted until their natural sugars caramelize, yielding a tender, syrupy texture with golden-brown edges. A light brush of butter and cinnamon enhances the caramelization without masking the fruit's flavor. Serve warm over ice cream, pancakes, or oatmeal, or as a simple side for breakfast or dessert.

Ingredients

  • 4 ripe bananas, halved lengthwise
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt

Method

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Peel the bananas and slice them in half lengthwise. Arrange cut-side up on the prepared baking sheet.

  3. Brush the cut sides of the bananas with melted butter, then drizzle with lemon juice.

  4. In a small bowl, mix the brown sugar, cinnamon, and salt, then sprinkle evenly over the bananas.

  5. Roast in the preheated oven until the bananas are soft and caramelized at the edges, 12 to 15 minutes.

  6. Remove from the oven and let cool for 2 to 3 minutes before serving warm.
