Roasting poblano peppers softens their flesh and deepens their flavor with a smoky char, making them ready for stuffing, blending into sauces, or dicing into soups and salsas. The blistered skins peel away easily after a short steam in a covered bowl, leaving tender, pliable chiles behind.

Ingredients

  • 4 poblano peppers
  • 1 tablespoons olive oil
  • 1/4 teaspoons salt

Method

  1. Preheat the broiler to high and position a rack about 6 inches from the heat source.

  2. Rub the poblano peppers all over with olive oil and arrange them whole on a foil-lined baking sheet.

  3. Broil the peppers, turning every 3 to 4 minutes with tongs, until the skins are blistered and charred on all sides, 12 to 15 minutes total.

  4. Transfer the charred peppers to a heatproof bowl and cover tightly with plastic wrap or a plate to trap steam.

  5. Let the peppers steam, covered, until cool enough to handle, about 15 minutes.

  6. Peel off the loosened charred skins with your fingers or a paring knife, discarding the skins.

  7. Slit each pepper open, remove the stem and seeds, and season the flesh with salt.

  8. Use the roasted poblanos immediately in your recipe, or refrigerate in an airtight container for up to 4 days.
