- 1 pound bulk pork breakfast sausage
- 1/3 cup all-purpose flour
- 3 1/2 cups whole milk
- 1/2 teaspoon salt
- 1 teaspoon black pepper, coarsely ground
- 1/4 teaspoon crushed red pepper flakes
- 4 biscuits, split, for serving

In a 9-inch skillet over medium heat, cook the sausage, breaking it into small crumbles with a spatula, until browned and no longer pink, 7 to 8 minutes.

Sprinkle the flour evenly over the sausage and drippings. Stir constantly and cook until the flour is no longer raw-smelling, about 1 minute.
