Ingredients

  • 1 block extra-firm tofu, pressed and cubed
  • 1 head broccoli, cut into florets
  • 1/2 cup cashews
  • 2 Tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 Tbsp fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp cornstarch

Instructions

  1. Press the tofu to remove excess water, then cut into cubes.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and cornstarch to make the sauce.
  3. Heat the sesame oil in a large skillet over medium heat. Add the tofu and cook until crispy, about 5 to 7 minutes, turning occasionally.
  4. Add the garlic and ginger to the skillet, cooking until fragrant, about 1 minute.
  5. Stir in the broccoli florets and cashews, then pour in the sauce. Cook until the broccoli is tender and the sauce has thickened, about 5 minutes.
  6. Serve hot over rice or noodles.
