- 8 dried shiitake mushrooms, rehydrated and finely chopped
- 1 pound ground pork
- 3 scallions, finely chopped
- 1 tablespoon fresh ginger, minced

- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon toasted sesame oil
- 1 tablespoon shaoxing wine
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1 teaspoon cornstarch
- 1/2 teaspoon salt

Soak dried shiitake mushrooms in hot water until softened, about 20 minutes, then drain, squeeze out excess liquid, and finely chop.
