These noodles come together in the time it takes water to boil, coating strands in a glossy garlic butter sauce with a hint of soy and herbs. A quick weeknight side or light main that pairs well with grilled meats, tofu, or a fried egg on top.

Ingredients

  • 12 ounces spaghetti or egg noodles
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup reserved pasta water
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons fresh parsley, chopped
  • salt and black pepper, to taste

Method

  1. Bring a 6-quart saucepan of salted water to a boil and cook the noodles according to package directions until al dente.

  2. Before draining, scoop out 1/4 cup of the pasta water and set aside. Drain the noodles and set aside.

  3. In the same pot or a large skillet, melt the butter over medium heat.

  4. Add the minced garlic and red pepper flakes, and cook, stirring constantly, until the garlic is fragrant and lightly golden.

  5. Add the soy sauce and reserved pasta water to the skillet, stirring to combine with the garlic butter.

  6. Add the drained noodles to the skillet and toss with tongs until evenly coated in the garlic butter sauce.

  7. Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Season with salt and black pepper to taste.

  8. Serve immediately while warm.
