A chuck roast simmers for hours with beef broth and aromatics until it shreds easily, then gets piled onto toasted hoagie rolls with melted provolone. The savory cooking juices double as an au jus for dipping, making this a satisfying hands-off dinner for busy weeknights or casual gatherings.

Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 1 cup water
  • 1/4 cup soy sauce
  • 1 yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 1 teaspoon salt
  • 6 hoagie rolls
  • 6 slices provolone cheese
  • 2 tablespoons butter, softened

Method

  1. Pat the chuck roast dry and season all over with salt and pepper.

  2. Heat vegetable oil in a skillet over medium-high heat and sear the roast on all sides until browned, about 2 minutes per side.

  3. Place sliced onion in the bottom of the slow cooker and set the seared roast on top.

  4. Add beef broth, water, soy sauce, garlic, thyme, and bay leaves to the slow cooker.

  5. Cover and cook on low until the beef is fork-tender and shreds easily, 8 hours.

  6. Remove the roast to a cutting board and shred into bite-sized pieces using two forks, discarding excess fat.

  7. Strain the cooking liquid through a fine-mesh sieve into a saucepan, discarding bay leaves and onion solids, and keep warm over low heat as au jus.

  8. Butter the cut sides of the hoagie rolls and toast under the broiler until golden, 1 to 2 minutes.

  9. Pile shredded beef onto the toasted rolls, top each with a slice of provolone, and broil until the cheese melts, 1 to 2 minutes.

  10. Serve the sandwiches with small bowls of warm au jus for dipping.
