- 1/4 cup all-purpose flour
- 1/2 cup dry red wine
- 3 cups vegetable stock
- 2 tablespoons soy sauce
- 1 tablespoon tomato paste reserve, optional for color
- 2 teaspoons fresh thyme leaves
- 2 bay leaves
- 1 tablespoon olive oil
- 1 salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped, for garnish

Place the dried porcini mushrooms in a small bowl and pour the boiling water over them. Let soak for 15 minutes, then lift out the mushrooms, chop them, and reserve the soaking liquid.

Heat the olive oil in a 9-inch skillet over medium-high heat and sear the cremini mushrooms in batches until browned, about 5 minutes per batch.

Transfer the seared mushrooms to the slow cooker along with the chopped porcini and reserved soaking liquid.
