Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar, plus extra for rolling
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract

In a large bowl, beat the softened butter and sugar together with a hand mixer on medium speed until light and fluffy, about 3 minutes.

Add the egg, vanilla extract, and almond extract to the butter mixture and beat until fully combined.

Gradually add the flour mixture to the wet ingredients, mixing on low speed just until a soft dough forms.

Cover the dough and chill in the refrigerator for at least 30 minutes to firm up.

Preheat the oven to 350°F and line two baking sheets with parchment paper.

Scoop the dough into 1 1/2-tablespoon portions, roll into balls, and roll each ball in granulated sugar to coat.
