This glaze simmers ripe mango puree with chili garlic sauce, lime, and a touch of honey until thick and glossy. It brushes onto grilled chicken, salmon, or shrimp in the last few minutes of cooking, or works as a dipping sauce for spring rolls and skewers.

Ingredients

  • 2 cups ripe mango, peeled and diced
  • 1/4 cup rice vinegar
  • 3 tablespoons honey
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1 tablespoon water
  • 1 teaspoon cornstarch

Method

  1. Combine the diced mango, rice vinegar, honey, chili garlic sauce, lime juice, soy sauce, garlic, ginger, red pepper flakes, and salt in a 6-quart saucepan.

  2. Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer, stirring occasionally, until the mango softens.

  3. Puree the mixture with an immersion blender until smooth, or transfer to a blender and blend until smooth, then return to the saucepan.

  4. Whisk together the water and cornstarch in a small bowl until smooth, then stir into the mango mixture.

  5. Return the saucepan to medium heat and simmer, stirring frequently, until the glaze thickens enough to coat the back of a spoon.

  6. Remove from heat and let cool slightly before transferring to a jar; the glaze will continue to thicken as it cools.
