Ingredients
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 20 ounces fresh spinach, roughly chopped
- 8 ounces feta cheese, crumbled
- 2 ounces cream cheese, softened
- 1 large egg, lightly beaten
- 2 tablespoons fresh dill, chopped
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt

Heat the olive oil in a 9-inch skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent.

Add the garlic and cook, stirring constantly, until fragrant.

Add the spinach in batches, stirring until wilted and most of the liquid has evaporated.

Transfer the spinach mixture to a colander and press firmly with the back of a spoon to remove as much liquid as possible. Let cool to room temperature.

In a large bowl, combine the cooled spinach mixture, feta, cream cheese, egg, dill, nutmeg, black pepper, and salt. Stir until evenly blended.

Use the filling immediately in pastries or pies, or cover and refrigerate until ready to use.
