Create a flavorful meal with these easy spinach and pesto quesadillas, perfect for a quick lunch or light dinner.
Ingredients
- 4 large flour tortillas
- 2 cups fresh spinach, washed and dried
- 1/2 cup pesto sauce
- 2 cups shredded mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Heat 1 tablespoon of olive oil in a 9" skillet over medium heat.
- Place a tortilla in the skillet, and spread 2 tablespoons of pesto evenly over the surface.
- Add 1/2 cup of fresh spinach leaves on top of the pesto.
- Sprinkle 1/2 cup of shredded mozzarella cheese over the spinach.
- Top with another tortilla, pressing down gently.
- Cook for 3-4 minutes on each side, until the tortillas are golden brown and the cheese has melted.
- Remove from the skillet and cut into wedges.
- Repeat the process with the remaining tortillas and ingredients.
- Serve warm and enjoy!
