This glaze simmers fish sauce, palm sugar, and lime juice into a glossy syrup with a deep salty-sweet backbone. It coats grilled meats, roasted vegetables, or noodles in minutes, drawing on the flavor base common to Vietnamese and Thai dipping sauces. Keep a jar on hand to brighten rice bowls or glaze wings before serving.
Ingredients
- 1/2 cup fish sauce
- 1/2 cup palm sugar, grated (or light brown sugar)
- 1/4 cup water
- 3 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 red Thai chile, thinly sliced (optional)
- 1 teaspoon rice vinegar
Method
-
In a small saucepan, combine the fish sauce, palm sugar, and water.
-
Set the pan over medium heat and stir occasionally until the sugar fully dissolves, about 2 minutes.
-
Increase heat slightly and simmer the mixture, stirring occasionally, until it reduces and thickens into a syrupy glaze, about 8 minutes.
-
Remove the pan from heat and stir in the lime juice, garlic, sliced chile, and rice vinegar.
-
Let the glaze cool to room temperature; it will continue to thicken slightly as it cools.
-
Transfer the glaze to a jar and store in the refrigerator, using to brush over grilled meats, roasted vegetables, or noodles as desired.
