- 1/2 cup tahini
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1/2 cup water, plus more as needed
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 3/4 teaspoon salt
- black pepper, to taste

In a medium bowl, whisk together the tahini, lemon juice, and minced garlic until smooth. The mixture will thicken and seize slightly at first.

Whisking constantly, slowly add the water a little at a time until the dressing loosens into a smooth, pourable consistency.

Whisk in the olive oil, cumin, salt, and black pepper until fully combined.

Taste and adjust seasoning, adding more lemon juice, salt, or water to reach the desired flavor and thickness.
