  • 1/3 cup fresh lemon juice
  • 2 cloves garlic, minced

  • 1/2 cup ice water, plus more as needed

Method

  1. In a medium bowl, whisk the tahini and lemon juice together; the mixture will look thick and seized at first.

  3. Whisking constantly, drizzle in the ice water a little at a time until the sauce turns pale, smooth, and pourable.

  4. Taste and adjust with more salt or lemon juice, and thin with additional water if a looser consistency is desired.
