These turkey burgers are mixed with whole grain and Dijon mustard for a tangy depth that keeps lean ground turkey from tasting flat. Grilling over direct heat gives the patties a charred crust while a mustard glaze brushed on in the final minutes locks in moisture. Serve on toasted buns with classic burger toppings for an easy weeknight dinner or weekend cookout.

Ingredients

  • 1 1/2 pounds ground turkey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 2 tablespoons honey mustard, for glazing
  • 1 tablespoon olive oil, for brushing grill
  • 4 hamburger buns, split
  • 4 leaves lettuce
  • 4 slices tomato
  • 4 slices red onion

Method

  1. In a large bowl, combine the ground turkey, Dijon mustard, whole grain mustard, Worcestershire sauce, minced garlic, panko breadcrumbs, egg, salt, and pepper. Mix gently with your hands until just combined.

  2. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick, pressing a slight dimple in the center of each to prevent doming.

  3. Cover the patties and refrigerate for 15 minutes to help them hold together on the grill.

  4. Preheat a grill to medium-high heat (about 400°F) and brush the grates with olive oil.

  5. Place the patties on the grill and cook for 5 minutes without moving them to develop a good sear.

  6. Flip the patties, brush the tops with honey mustard, and continue grilling for 5 to 6 minutes, until the internal temperature reaches 165°F.

  7. Remove the patties from the grill and let them rest for 3 minutes.

  8. Toast the buns on the grill for about 1 minute, then assemble burgers with lettuce, tomato, red onion, and the turkey patties.
