Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup snap peas, trimmed
  • 1 cup mushrooms, sliced
  • 1/2 cup teriyaki sauce
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon red pepper flakes (optional)

Method

  1. Wash and prepare all vegetables: cut broccoli into bite-sized florets, slice the bell pepper, julienne the carrot, trim the snap peas, and slice the mushrooms.

  2. Heat the vegetable oil in a 9-inch skillet or wok over medium-high heat.

  3. Add the garlic and ginger and stir-fry until fragrant, about 30 seconds.

  4. Add the broccoli and carrot and stir-fry for 3 minutes.

  5. Add the bell pepper, mushrooms, and snap peas and continue to stir-fry until all vegetables are crisp-tender, about 4 minutes.

  6. Pour the teriyaki sauce over the vegetables and toss to coat evenly.

  7. Cook, stirring frequently, until the sauce thickens slightly and clings to the vegetables, about 2 minutes.

  8. Remove from heat and sprinkle with green onions, sesame seeds, and red pepper flakes if using. Serve immediately.
