Ingredients

  • 1 1/2 pounds ground beef, 80/20
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 cup barbecue sauce
  • 4 slices pepper jack cheese
  • 4 hamburger buns, split
  • 1/2 cup crispy fried onions
  • 1 dill pickle, sliced
  • 1 tablespoon vegetable oil

Method

  1. In a large bowl, combine the ground beef, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Mix gently with your hands until just combined.

  2. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick, pressing a slight dimple in the center of each.

  3. Heat a grill or grill pan over medium-high heat and brush with the vegetable oil.

  4. Grill the patties for 4 minutes on the first side without moving them.

  5. Flip the patties, brush the tops generously with barbecue sauce, and grill for 3 minutes more.

  6. Top each patty with a slice of pepper jack cheese and grill for 1 minute, until the cheese melts and the burgers reach an internal temperature of 160°F.

  7. Toast the split buns on the grill, cut side down, for 30 seconds until lightly golden.

  8. Transfer the patties to the toasted buns and top each with an extra brush of barbecue sauce, crispy fried onions, and pickle slices before serving.
