This stir-fry sauce comes together quickly by blending garlic, chiles, and fresh Thai basil with fish sauce, soy sauce, and a touch of sugar for balance. It pairs well with ground pork, chicken, or tofu for a fast weeknight meal reminiscent of pad krapow. Make it fresh just before cooking since the basil flavor fades over time.
Ingredients
- 1/4 cup fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons brown sugar
- 1/4 cup water
- 8 cloves garlic, minced
- 4 Thai chiles, minced
- 2 cups fresh Thai basil leaves, loosely packed
- 1 tablespoon vegetable oil
- 1 tablespoon lime juice
Method
-
In a small bowl, whisk together the fish sauce, soy sauce, oyster sauce, brown sugar, and water until the sugar dissolves.
-
Heat the vegetable oil in a 9-inch skillet over medium heat. Add the garlic and Thai chiles and stir-fry until fragrant, about 30 seconds.
-
Pour in the fish sauce mixture and simmer, stirring occasionally, until slightly thickened, about 2 minutes.
-
Remove the skillet from the heat and stir in the Thai basil leaves until just wilted.
-
Stir in the lime juice, then transfer the sauce to a jar or bowl and use immediately for the best basil flavor.
