Large marshmallows are skewered and rotated slowly over heat until the outside turns deep gold and crackly while the inside melts to a warm, molten center. Works over a campfire, grill, or stovetop burner, and makes a quick base for s'mores or a simple fireside treat.

Ingredients

  • 12 large marshmallows

Method

  1. Skewer 2 to 3 marshmallows onto a long roasting stick or metal skewer, leaving space between each.

  2. Hold the marshmallows a few inches above the flame or hot coals, keeping them close enough to color but not touch the fire directly.

  3. Rotate the skewer slowly and continuously, toasting until the marshmallows are golden brown and blistered on all sides.

  4. Pull the marshmallows away from the heat and let them cool for about 30 seconds before eating, as the center will be very hot and gooey.
