Ingredients
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- 1 cup unsalted butter, softened, for buttercream
- 4 cups powdered sugar
- 3 tablespoons heavy cream
- 1 teaspoon vanilla extract, for buttercream
- 1/4 teaspoon salt, for buttercream
- 1/3 cup rainbow sprinkles
Method
-
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans, lining the bottoms with parchment paper.
-
Whisk together the flour, baking powder, and salt in a medium bowl; set aside.
-
In a large bowl, cream the butter and granulated sugar with a mixer on medium speed until light and fluffy, about 3 minutes.
-
Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
-
Add the flour mixture in three additions, alternating with the milk in two additions, beginning and ending with the flour. Mix just until combined.
-
Divide the batter evenly between the prepared pans and smooth the tops.
-
Bake until a toothpick inserted in the center comes out clean, 28 to 32 minutes.
-
Cool the cakes in their pans on a wire rack for 10 minutes, then turn out onto the rack to cool completely, about 1 hour.
-
Meanwhile, make the buttercream: beat the butter in a large bowl on medium speed until smooth and pale, about 2 minutes.
-
Add the powdered sugar one cup at a time, beating on low speed until incorporated.
-
Add the heavy cream, vanilla extract, and salt, then beat on medium-high speed until light and fluffy, about 3 minutes.
-
Place one cake layer on a serving plate and spread a layer of buttercream evenly over the top.
-
Top with the second cake layer and frost the top and sides of the cake with the remaining buttercream.
-
Decorate the top and base of the cake with rainbow sprinkles before slicing and serving.
