These no-bake bites blend rolled oats, dried mango, and shredded coconut with a touch of turmeric and ginger for a warm, earthy contrast to the fruit's sweetness. They come together in minutes with no oven required, making them a convenient snack for lunchboxes, post-workout fuel, or a quick breakfast on busy mornings.

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup dried mango, finely chopped
  • 1/2 cup shredded coconut, unsweetened
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut oil, melted
  • 1/4 cup shredded coconut, for coating

Method

  1. In a large bowl, combine the rolled oats, chopped dried mango, 1/2 cup shredded coconut, turmeric, ginger, salt, and chia seeds. Stir to distribute the spices evenly.

  2. Add the peanut butter, honey, and melted coconut oil to the dry mixture. Stir with a spatula until a thick, sticky dough forms and no dry pockets remain.

  3. Cover the bowl and refrigerate the mixture for 15 minutes to firm up and make rolling easier.

  4. Scoop out level tablespoons of the mixture and roll between your palms into 1-inch balls, about 20 total.

  5. Spread the remaining 1/4 cup shredded coconut on a plate and roll each ball to coat the outside lightly.

  6. Refrigerate the finished bites in an airtight container for at least 20 minutes before serving to let them set firm.
